Maxwell Fuzhou Oyster Cake in Maxwell Market

Until recently, I have never tasted an oyster cake before, and it was a friend of mine who is very well versed with the inner trappings of Maxwell Market that led me to this stall one afternoon.

Run by a very friendly lady boss, this stall serves nothing but oyster cakes, and from the looks of it, they are selling a bunch of these really well.

On their signage, it clearly shows that the very popular Anthony Bourdain has been here and has given his approval.

With that said, one was hoping for a surprise here and I was not disappointed.

Oyster Cake

Oyster cakes here are sold in two variations, one with oyster and and one without. I naturally went for the former.

The stuffings consisted of pork, chinese celery, pork and shrimp. And all of these coated with a nice batter and deep fried until a dark brown color.

I had a bite and was instant mesmerized. The flavors were immediately bursting and the combination of that and the textures was just amazing. It was a simple dish, but what a dish!

Friendly Lady Boss

Oyster cakes like these are hard to find, and when they are made this good, it certainly is a no-brainer to check this out. And kudos to the lady boss too, for having a big smile for every customer.
