Slice 2 medium potatoes into thin discs and fry them in a pan of oil until they are soft and lightly browned. Cook for about 10 minutes or so. Once they turn soft, remove and set aside.
In the same pan, fry 2 chopped garlic and some white bits of scallion until fragrant.
Add 100 to 120g of minced pork and season with 1 tsp light soya, 1 tsp dark soya and 1 tsp oyster sauce. Stir and mix well.Once the pork is cooked and thoroughly coated with the sauces, add the potatoes and mixed well. Add a dash of water to create a sauce.
Add the remaining green parts of scallion and season with both white and black pepper. Serve and enjoy with that hot bowl of porridge and some greens as a side too.
