We thought of combining our favourite emperor chicken recipe with a rice cooker one and came up with this easy and delicious rendition. It is also our most nutritious rice cooker recipe yet.
Marinate 4 chicken drumsticks with 1/2 tsp salt, 6 tbsp Chinese wine and 1 tbsp sesame oil. Mix well and refrigerate for at least 30 minutes.
Rinse a handful of angelica root, huai shan, red dates, dried scallops, dried longan and goji berries in water for 20 seconds. Strain the herbs.
In a rice cooker, add 1 cup of rinsed rice. Add the herbs, followed by the marinated drumsticks. Add 220ml water. Season with 1/2 tsp salt.
Set the rice cooker to normal rice cooker mode and cook it all the way.
When the rice is fully cooked, open the lid and give everything a good stir. Then simply serve into bowls or a claypot. Garnish with a parsley sprig.
The rice will be flavoured with the chicken fat and the herbs, hence a pleasant sweetness to go with the chicken savoury notes. Very nutritious and tasty at the same time.
