This is a perfect one pot dish for kdrama fans! Just a few simple ingredients and you are good to go.
Start by marinating 200g of pork shabu shabu with 2 tsp light soya sauce, black pepper and 2 tsp corn flour. Mix well and refrigerate for 30 minutes.
In a pot, add a tsp oil. Sauté 2 cloves of minced garlic and the white chopped parts of 1 stalk of leek until they turn fragrant.
Add about 1 cup worth of kimchi and mix well. Add about 500ml water to make a stew. Add 150g of penne pasta and bring everything to a boil. Simmer for 10 minutes.
After 10 minutes, melt a slice of cheddar cheese inside the kimchi stew to get a creamier consistency. Add a packet of chopped soft tofu, followed by the marinated pork.
Stew for a few minutes until the pork is just about cooked. Season with 2 tsp sesame oil and fresh black pepper. Add more salt if required.
To finish the stew, break a few pieces of dried crispy seaweed and garnish with the green parts of the leek and it is done.
Serve in a big bowl to go along with the latest kdrama. A comforting Korean inspired stew with a slightly Italian twist as the penne serves as a great substitute for tteokbokki.
